The Hemp Pantry makes Veurre®, a plant-based butter alternative that is free from palm oil and contains no allergens – it’s dairy-free, soya-free, nut-free and gluten-free.

One of the ingredients of Veurre® is hemp seeds, considered a superfood. It also contains virgin coconut oil, extra virgin olive oil and cacao butter. All the ingredients are organic and sourced sustainably.

The beauty of Veurre® is its versatility. It’s a delicious vegan butter perfect for baking, cooking, melting and spreading. Here we detail four ways you can use Veurre®.

Use Veurre® for Baking

Veurre® is a perfect dairy-free butter for baking with. Our founder, and Veurre® creator, professional chef Matthew Atkins, originally developed it for baking. He wanted to find a product that could replace dairy butter and produce the same quality of cakes, bakes and pastries.

Matthew found that many butter substitutes on the market either produced cakes, bakes and pastries that spoiled quickly, were dry or had an odd texture. He didn’t want to use palm oil for sustainability reasons and wanted to use high-quality organic ingredients.

Many of his vegan clients also had allergies, so instead of using one product for his vegan clients and another for his clients who were gluten, soya or nut free, he developed a vegan butter substitute that was also free of all the major allergens.

He tested the early variations of Veurre® by making croissants – until he perfected the recipe to make delicious pastries that were almost indistinguishable from croissants made with dairy butter.

“I started by just using coconut oil, and then a combination of ingredients to find a blend of fats that acted just like butter,” Matthew said.

“In a busy kitchen, there’s no time to use various ingredients for different recipes, using trial and error to get the right quantity. I wanted a product that I could use for all cakes, bakes and pastries as a direct replacement for butter, and using the same butter quantities.”

“After experimenting for a couple of years, I cracked it – with a combination of high-quality hemp seeds, coconut oil, olive oil and cacao butter. This secret recipe can be used in place of butter, producing excellent tasting cakes and pastries – including croissants – every time.”

Veurre® is an easy-to-use dairy-free butter for cakes, bakes and pastries. Simply use the same amount of Veurre® as butter in a recipe.

However, if you’re switching other ingredients e.g. changing flour for gluten-free flour, then you might need to experiment to find the ideal quantities. 

Use Veurre® for Cooking

While testing Veurre® for baking, Matthew also tweaked the recipe to ensure that it could be used as a vegan butter for cooking too.

He said: “I wanted to create one blend of high-quality ingredients that could be used to create all kinds of sweet and savoury vegan and allergen-free dishes.

“I didn’t want to reach for different oils for different recipes, that’s far too time-consuming and has the potential for human error, especially when the heat is on in a professional kitchen.”

Veurre® acts like dairy butter when added to sauces such as bechamel sauce, as an ingredient in vegan dishes like garlic mushrooms, creamy soups or potatoes au Gratin. It adds a delicious richness to recipes.

It works well for shallow frying, for example to fry onions and garlic, however is not suitable for deep frying.

Use Veurre® for Spreading

The plant-based butter alternative is also fantastic for spreading. It has a smooth consistency similar to dairy butter, and is a light-yellow colour. It acts in the same way too – it is solid from the fridge, but then softens when left at room temperature. It spreads and melts into warm bread or toast just like butter.

Veurre® can be used on bread, bagels, crumpets, crackers, scones, croissants – anything you usually spread dairy butter onto. It has a mild coconut, olive and nutty hemp flavour that is delicious on its own or combined with sweet jams or savoury spreads.

“It was important to me to have a product that tasted delicious by itself and not just in recipes,” Matthew said.

“My clients often asked for a pot of vegan butter to accompany meals that could be spread and used in the same way as butter. I didn’t want to serve highly processed, palm oil and chemical-laden substitutes or any product that contained allergens, so Veurre® had to work for spreading too.”

Use Veurre® for Melting

“Another way I like to use Veurre® is to melt it, either on its own or blended with herbs, garlic, caramelised onions or chilli – or even harissa paste,” Matthew added.

Veurre® can be melted on jacket potatoes, stirred into freshly cooked pasta, or tossed through roasted vegetables.

You can also add lashings of Veurre® to corn on the cob with some black pepper, or on asparagus and peas with a squeeze of lime and a sprig of mint.
